This wine has a shiny gold colour with pale green reflects. The first nose is straight with a typical minerality: cherry plum and smashed oyster shells. The second nose develops perfumes of lime and vanilla. At the palate, the well-constructed structure has a beautiful salinity, a round and fresh texture, and a mouth-watering finish. It is a full-bodied wine that can be a great companion with food.
It will develops its complexity during the next ten years.
It will match perfectly with seafood or cold cuts, and will naturally be perfect with fishes.
Alcoholic and malo-lactic fermentation are done with wild yeasts between 20 et 22°C, followed by an aging of 12 months in large oak vats (foudres).
The movements and inputs are limited to the bare minimum in order to guarantee an authentic terroir taste.
The vines are planted on a soil dating from the kimmeridgian era (clay-limestone with oyster shells inclusion) in the historical heart of the Chablis appellation.
It is the oldest vines of the domaine, planted in 1976 on a single-vineyard socalled "Les Malantes".
